Well you’re in luck. Our team sat down and really got down to the heart and soul of what makes our brand tick. We are real people, using our hands and hearts, to make all-natural food with REAL ingredients. Check it out.
Most new recipes arrive to us as weird dreams, heralded by a dragon made of sausage on which a wizard rides, wielding a toothpick as a wand. If the wizard isn’t forthcoming, new recipes are a communal effort. Someone in the crew will have an idea (everyone’s ideas are valid)- perhaps a dish they love to cook, or something they read about in an old cookbook.
Our production team will sit down and think through the recipe: what kind of meat would work best, what herbs and spices are necessary and which ones are superfluous.
Usually Alex, our Head of Production, will make a small batch by hand for everyone to try. We’ll tweak it, argue about the seasoning, and if there’s consensus it goes into production.
We try several recipes for each one that makes it into production. We eat our mistakes here at MeatCrafters, and we eat well, which should tell you what we think of the products we choose to produce for commercial consumption.
Duck. Breast. Prosciutto. Possibly in an omelette. No, wait, in mac and cheese. Or on a pizza. Or in a mac and cheese omelette. Or in a mac and cheese omelette pizza. Sorry, what was the question?
For charcuterie, wine is a more common pairing, but high quality craft beer works just as well. Same rules apply to beer as do to wine: the more delicate the flavor, the lighter the beverage; the more assertive the flavors, the bolder the beverage.
You want drinks that simultaneously contrast the mouthfeel of the meats on the board and also share a few similar flavors- so salamis with coriander for example can be paired with a hoppy beer or wine with citrus notes, but if the salami also has a lot of pepper, perhaps a richer wine or beer so you taste everything without the food or drink overshadowing the other.
Spicier salamis require stronger wines or beers, and fattier meats pair well with more acidic drinks to cut the richness.
Begin at the beginning: what don’t you eat, and what’s your preferred cooking method? Love chicken but don’t eat pork? Love spicy foods? Hate garlic? Are you grilling, or cooking your sausages in a pan? Roasting them in the oven or adding them to stew? Only ever eat gas station hot dogs?
Think about the last ten meals you made. Do you eat a lot of pasta? Make adventurous salads?
If you can’t handle heat, maybe shy away from our Charro Habanero or the Chicken Manganero. If you can’t stand garlic, perhaps the Kielbasa or Lamb Mediterranean isn’t for you.
Adventurous eating is almost always rewarded, but there’s a reason there so many flavors of ice cream get made: no one forces you to eat chocolate if you’d prefer vanilla or strawberry. We make dozens of kinds of sausage so everyone can find their favorite- or find a new favorite.

Sausage has traditionally been a way of using scraps so as not to waste anything edible. Salamis especially, since the goal was to extend the shelf life of precious, precious calories. It’s a humble beginning, but you don’t honor a humble beginning by slavishly adhering to it- you have to innovate. We take the opportunity to make the best possible products for our customers, and genuinely love to make the most flavorful, highest quality products on the market with the best ingredients available.
Could we turn out bland sausage full of odds and ends and filler? Probably not. It’s just not what we do. But if you’re reading this, chances are you’re one of us- someone who goes out of their way to research the things they eat, and are conscious of the way exceptional food improves the quality of your life.
We’re humble enough to know what it takes to make great products, but we don’t make humble products.
