Fall Spice Sausage Casserole
You don’t need to wait till November to enjoy the autumn flavors of Thanksgiving. This Fall Spice Casserole is excellent as a side or a full meal.
Sauté the sausage, apple, onion, and celery until meat is cooked through. Fold in rice, raisins, salt, allspice, cinnamon, and pepper. Pour the mixture into a greased baking dish and cook in a 350F oven for 30 minutes.
Make this recipe with Duck and Pork Sausage for the best flavor. These sausages are rich and meaty, adding the perfect dimension to the casserole.
In a separate pan, sauté the sliced sausage. Add chopped onion and garlic and cook on medium-low until golden. Add sage, white wine, chicken stock, and canned (unsweetened) pumpkin. Bring to a simmer and then stir in heavy cream, pumpkin pie spice, salt, and pepper. Cook for ten minutes. Boil the penne according to package directions. Drain pasta and mix sauce into pasta.
