There is only 1 Hanger Steak per animal- it hangs down from the diaphragm, giving it it's "Hanger" moniker! Also known as “Butcher Steaks” (since butchers know enough to keep them for themselves), these are one of the absolute BEST cuts a cow has to offer. The equivalent of two tender filets with more flavor than you could possibly imagine. Sear in a hot pan, turning every minute, for 6 minutes, and you’ve got nirvana on your hands.
