The Coulotte Steak, most popular in places like Portugal and Brazil, goes by many names: including Sirloin Cap, Rump Cap, Rump Cover, and Picanha Steak. In our opinion, a rose by any other name is still a Coulotte (or culotte), and it is a revelation! The photo shows one Coulotte fat-cap-up and one fat-cap-down.
