A Spanish sausage from the Basque region, Chistorra is a more worldly version of our Chorizo Picante sausage. We make ours in a lamb casing, seasoned with garlic, paprika, and Spanish sherry, coiled in one long rope as is tradition. Cooked and diced up, it's delicious for breakfast with fried eggs and potatoes; added into white bean stew; or grilled and cut into small pieces atop toasted baguette slices for tapas in the afternoon.
