Randall Lineback Beef Pastrami

  • 1 pack Sliced Pastrami (12oz), frozen
  • 1 pack Unsliced Pastrami Point (1.2-1.5 lbs), frozen

This is the magical outcome when Randall Lineback briskets are brined and slow-smoked over the course of a day to absolute perfection by the pros at EPIC Curing. To consume: whether sliced or unsliced, thaw your pastrami first and remove from packaging. Place in a steamer basket over gently boiling water. For sliced pastrami, steam for 2-3 minutes. For unsliced pastrami, steam for 8-10 minutes, then slice very thinly with a sharp carving knife. Good luck even getting it INTO that sandwich... you'll probably just gobble it up en route!

Sliced packs make 2-3 sandwiches and are cut from the Flat of the Brisket. Our unsliced Brisket comes from the slender Point muscle. We've left these unsliced for those of you who are DIY and like a thin, flavorful pastrami slice.
